RoboCopy is quite easy to use, but it does not do the shares
Download latest version from here Windows Server 2003 Resource Kit Tools
ROBOCOPY C:\ \\MyServer\Share\OldDrive copy:dat /e /z
Will copy the entire drive to the share point on the server including all empty folders, basically a full mirror onto the server. But excluding the permissions. copyall should do the permissions and owner etc..
However here are some links to file recovery software that to my understanding they are free and not just teaser demos.

isn't that what xcopy's "/O" option is for?

Agree with Lonkero on unErase (not sure about PC Inspector)
If you want a PRO version then you can take a look at this product. Not cheap, but I can attest to how well it works, we use it at work and it works great.
Had one system that was running Windows 98. They formatted the drive and converted it to NTFS then installed Windows 2000 on it. Ran it for a couple days, then came back and said they needed some digital images off of the system. I ran the utility on it (took a few hours) but was able to restore 185 digital images out of about 225.
Expensive, but very professional.
