There are two keys that you can edit for what you want.
HKEY_Current_User\Software\Microsoft\Windows\currentVersion\Explorer\Shell Folders
Local AppData (Change the value to the userdirectory in the server , then the pst files won't be copied)

HKEY_Current_User\Software\Microsoft\Windows\currentVersion\Explorer\User Shell Folders
Local AppData (Change the value to the userdirectory in the server , then the pst files won't be copied)

Of course under Windows NT you have to replace the Windows with windows NT in the key

I created a script to put the whole user profile on the server, am only correcting it and implementing a firstlogon so it would be automated with new users(Because you need to have an user.dat file for the user in the profile directory).
