We have some 3000 workstations here - we've only upgraded the dozen or so in tech-services dept to Vista Business. Turns out, some of the web-based apps won't run on IE7. Most workstations are also between 512M and 1G, barely enough for Vista to load, and are already straining under XP Pro. Most of these use roaming profiles over T1 connections - the users in the two HQ locations use local profiles.
We run 1G RAM in our dept and it's OK for what we do, but back at my office we run 2G RAM in all Vista systems. I personally run 4G at home, but often play with Photoshop and other memory-hungry apps. On XP, 2G was plenty.
I don't know when W-7 will be here, but I might consider waiting to see if it's an improvement.
