The main drawback of SBS is a) the 75-user limit and b) that all server components MUST be installed on the same server. I would only recommend SBS if you are sure you will never grow beyond 75 users and you do not rely on heavy usage of the individual server components. Otherwise, in order to ensure sufficient business continuity and desaster recovery, I'd ratehr spend some more money on multiple servers, set up redundantly and separate the various componenst, e.g. Exchnage on a separate server and SQL Server on yet another server. The additional licensing and hardware costs come in very handy in case of desaster. Also, have a consultant design the intial setup and assist in rolling out the setup with the sysadmin performing the actual work (training!) and the consultant looking over the shoulder.
