You need to search high and low to find one definitive source. I rely on the Registry Reference included in the Win2k ResKit for first look. After that I search MS TechNet which I have on DVD. Then I check web sites like:

http://www.windows2000faq.com
http://www.sysinternals.comAnother source, if you're curious enough is to rip the policy .adm files.
There are also some utils on the net like RegMon and RegSnap that you can use to monitor changes.
Personally, I prefer to have policies do the mods as the users cannot easily reverse engineer (rip) the mods like they can from your logon script.
